AVOCADO TOAST WITH MOROCCAN EGGS

A little while ago I came across the recipe for Moroccan Eggs and being that I adore cooking with spices, I thought I’d give it a go. I also lately began loving how filling but simple Avocado Toast is and mixing these two together has been the best easy go-to lately.

**Fun Fact: I use to H A T E avocado when I was growing up. I’ve grown to really like it which I find so funny since I use to make such an issue growing up when I was forced to eat it in my meals

it’s pretty simple, you need the following 7 spices:

  • Garlic Powder
  • Ginger Powder
  • Tumeric
  • Paprika
  • Cayenne Pepper
  • Black Pepper
  • Cilantro Leaves

I begin cooking the egg followed by sprinkling to my liking little by little with each spice. As that is cooking, I toast my favorite gluten-free toast from Trader Joe’s (they’re small squares which I like compared to regular bread) and I begin opening the avocado. Once I make squares and scoop out the avocado, I smash it in a bowl with a spoon. I blend it into a smooth texture (I don’t like it too smooth, I like a few chunky pieces in it as well.) By this time, the egg is done and so is the toast.

I place the toast on a plate and carefully spread the avocado on the bread. I then sprinkle chia seeds and pepper on the avocado to add a little “OOMPH” to it. I then cut the egg in half because I think one egg to each toast piece is a bit overbearing and that’s IT! You’re done and ready to eat.

I love making this as a snack or even a light meal. It’s so filling and delicious with the mixture of all the spices. P.S It works wonders for the morning after if you’ve had a little one too many fun drinks the night before! 😉
